If you’re a yogurt lover, you might want to know about Blue Hill’s savory yogurts made with vegetables. You may have heard of Blue Hill’s farm-to-fork restaurants in New York City and Pocantico Hills, NY. The farm associated with the restaurant that raises 100 percent grass-fed cows. It uses the milk from these cows (and neighboring farms that raise their cows the same) to make savory, vegetable-flavored yogurt. 

Yogurt certainly has its benefits, but the amount of sugar that’s added to many supermarket brands of yogurt sometimes make them more akin to ice cream than a health food. Artificially sweetened yogurts aren’t necessarily a better option. Recent studies have shown that artificial sweeteners may be a factor in diabetes.

Blue Hill’s savory yogurts are sweetened with natural sweeteners like concentrated vegetable juices, honey and maple syrup, but a serving contains about half the amount of sugars in it than a serving of the sweetened yogurts I’m accustomed to.

I had samples of Blue Hill’s beet, carrot, butternut squash and sweet potato yogurts, and I enjoyed them. They were a bit of a mystery to my taste buds at first because I’m conditioned to yogurt being sweet. When I lifted the first bite of butternut squash yogurt to my mouth, I knew it would be different, yet I still expected it to be sweet.

It took a few mouthfuls to adjust expectations before I started to appreciate these yogurts for what they are – something new, tasty and incredibly versatile. They’re enjoyable right out of the container, but they have many culinary uses, too.

My favorite, much to my surprise, is the beet yogurt. It’s made with whole milk, roasted beets, honey, raspberry vinegar, beet juice concentrate, sea salt and live active cultures. The deep pink color of the yogurt is stunning, and the taste is tangy and balanced.

I used the carrot yogurt to make the Carrot Oatmeal Muffins.
