There were a few products that caught my attention at the Natural Products Expo East last week, and I’ll be telling you about many of them over the next week or so. I tended to drift toward exhibitors who had products that my family might be interested in, and with my husband’s recently discovered gluten intolerance, I was particularly interested in gluten-free products.


There were several gluten-free foods I tasted that are definitely not worth writing about. There were some products that were just awful. There were some that were pretty good. And there was one that made me think that perhaps I may be able to create gluten-free baked goods for my husband that are really good.


That product is Deya’s Gluten-Free Cake Flour, a new product created by home baker Deya Warren. Deya is a lawyer by profession, but she loves to bake. She shared with me her story about finding out about her gluten intolerance when she was trying to get pregnant. After struggling with infertility, someone suggested she remove gluten from her diet. Within two months of doing so, she became pregnant, and some other health issues improved for her.


Deya decided to create her own gluten-free flour blend when she became frustrated with the options out there. After listening to her story, I hesitantly took a taste test of the gluten-free pancakes she was offering. I was impressed. Deya offered me a sample of the flour to take home. Over the weekend, I used her pancake recipe to make breakfast for my family — my gluten-sensitive husband and two sons who have no gluten issues.


The Deya’s Gluten-Free Cake Flour that I used for the pancakes is a one-to-one replacement for all-purpose wheat flour. I found that it made a much thicker batter than traditional flour does, and I needed to add more milk than the recipe called for. In fact, I ended up adding a little milk to the batter before each batch of pancakes on the griddle because it would thicken up quickly.


The resulting pancakes were thick and fluffy, but cooked through well. The real test came when my family sat around the table to give them a try. They were a hit. Besides being different in texture from my normal pancakes (I like a really thin pancake, but I couldn’t get this batter to that consistency), no one was able to tell there was anything special about these pancakes. We all ate happily, and when I told the boys they had eaten gluten-free pancakes, they were surprised.


I’m excited to try Deya’s in other recipes like cakes and cookies. One of the testimonials on her website said that when used in a chocolate chip cookie recipe, no one was able to tell the difference. I’d love to be able to make chocolate chip cookies for my husband again.


Deya’s Gluten-Free Cake Flour is available on the Deya’s website for $9.50 for 25 ounces. Right now, it’s the only product available, but the site says that a bread flour and a sauce flour are coming soon.
