I've seen a lot of posts suggesting that you can shrink your eco-impact by reducing the amount of meat you eat each week. But last week I read an article on the Huffington Post that made such a powerful arguement on the issue that it seriously has me considering ditching meat altogether.

The post was called The Breathtaking Effects of Cutting Back on Meat and its author, Kathy Freston, did a great job of illustrating just how easy it wasy to make a huge impact using the power of your dinner plate.

For instance, did you know that if everyone was vegetarian for just one day, the U.S. would save 100 billion gallons of water, 1.5 billion pounds of crops, and 70 million gallons of gas? That is enough water to supply to all the homes in New England for close to four months, enough crops to feed the states of New Mexico for over a year, and enough gas to fuel all the cars in Canada and Mexico with plenty of gas to spare.

It's amazing what we can do by skipping the meat for just one day. My family and I can certainly handle that. And we're starting today.
