Chef A is back this week with another sauce that you can use on top of her basic chicken breast recipe. This makes four different sauces to rotate with these easy chicken breasts that you can make in a big batch and freeze to take out as needed.

Today's sauce has tomatoes, olives, capers, garlic, onions and more to give the chicken a Mediterranean finish.

  • *chicken breasts
  • 1 tbsp olive oil
  • sliced onion
  • 1 16 oz can diced tomatoes with italian seasoning
  • fresh basil
  • capers
  • green olives
  • garlic
  • salt and garlic pepper
  • parsley
  • green onion
  • parmesan cheese
Cooking directions
  1. Add olive oil and onions into a pan over medium-high heat
  2. Let cook until the onions are slightly brown and tender (5-8 minutes)
  3. Add garlic to the onions and stir for 30 seconds
  4. Add the tomatoes to the pan and let cook for 3-5 minutes
  5. Add the olives, capers, salt and garlic pepper to the pan
  6. Put the stove down to medium heat and let the sauce cook for about 5 minutes or until the sauce has reduced to about half
  7. Turn off the heat
  8. Add fresh basil and stir into the sauce
  9. Pour the sauce over the chicken breast
  10. Top with green onion, parmesan cheese and parsley and enjoy!
