Unless you've been living under a rock for the past decade, you've probably noticed the avocado's astounding rise in popularity.
The Washington Post reported in 2015 that "sales of Hass avocados, which make up more than 95 percent of all avocados consumed in the United States, soared to a record of nearly 1.9 billion pounds (or some 4.25 billion avocados) last year, more than double the amount consumed in 2005, and nearly four times as many sold in 2000."
One food lover who is embracing this delicious trend is Colette Dike, a Dutch food stylist and blogger who crafts avocado-centered dishes that are almost too beautiful to eat. In addition to comforting mainstays like guacamole and avocado toast, Dike has been testing the boundaries of this creamy, green fruit. One of the most aesthetically pleasing ways she's done this is by mastering the meticulous skill of shaving avocados into pasta-like ribbons:
Although one of the most popular ways to make veggie noodles is to use a manual machine known as a spiralizer, the pappardelle-esque avocado noodles you see above are carefully hand-shaved by Dike.
Expanding on this lovely technique, Dike will often add a little extra pizazz to her other expertly styled dishes by incorporating her signature shaved "avocado roses," as seen in the mouthwatering dish below:
This penchant for incorporating avocado into her daily meals is now being channeled into a new cookbook, which Dike says will include "sweet and savory dishes with avocado as hero of every dish."
In addition to featuring recipes for avocado fries, avocado ice cream and other avocado-centered dishes, the book will also offer tutorials on how to shave avocados and make avocado roses.
