Dill-Cucumber Tzatziki

Don’t let the name throw you. Tzatziki tastes like the best kosher pickle you’ve ever had without the snap.

Dill-Cucumber Tzatziki


  • 1 cucumber, peeled, diced
  • 8 ounces Greek yogurt
  • Half lemon, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 2 tablespoons fresh dill
  • 2 tablespoons fresh parsley
  • 1 clove minced garlic
  • Dash cayenne pepper

Prep time: 15 minutes

Total time: 1 hour 15 minutes


  1. To remove excess liquid, place diced cucumber in colander, add salt and cover. Set aside for 1 hour.
  2. Place cucumber on paper towels and pat dry.
  3. In mixing bowl combine cucumber with remaining ingredients. Stir until blended. Season to taste. Serve immediately.


Makes 1½ cups for an excellent centerpiece to a veggie platter.
