Poached Pears in White Wine Sauce

This simple addition has a seasonal ingredient in the starring role.

Poached Pears in White Wine Sauce


  • 3 Bosc pears, halved, cored and peeled
  • 6 ounces white wine
  • 6 ounces orange juice
  • 6 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 2 ounces brandy
  • Pinch saffron spice

Prep time: 10 minutes

Total time: 50 minutes


  1. Preheat oven to 350 degrees.
  2. Combine the liquid ingredients, brown sugar and cinnamon in a mixing bowl.
  3. Place pears facedown in a baking dish so they are barely touching. Add the syrup. Cook for 30 minutes.
  4. Remove pears from heat. Set aside.
  5. To make the sauce, pour liquid contents into a saucepan. Cook over medium heat for 10 minutes, stirring occasionally. Pour over poached pears.

Can be served immediately or refrigerated overnight.

Yield: Serves 6
