Jalapeno Corn Bread

Prep time: 10 minutes

Total cooking time: 30 minutes


1 20-ounce package cornbread mix

1 cup fresh corn

16 ounces whole milk

3 ounces melted butter

2 eggs

2 roasted jalapenos, diced and seeded


  • Have all ingredients at room temperature, pre-heat oven to 350 degrees F.
  • Grease a 9x9 baking pan with butter or vegetable oil.
  • Add ingredients to large mixing bowl. Stir until blended.
  • Pour mix into pan and bake 25 minutes or until golden.
  • Serve with chili and salsa.
