Last week I posted a video that showed what it takes to make it to the Kids’ State Dinner in Washington, D.C., with Michelle Obama. Tomorrow, 54 kids who developed recipes based on MyPlate guidelines, will invade the White House for a lunch with the first lady and others dedicated to helping kids eat healthy.

All of the winning recipes have been released as a downloadable cookbook in .pdf format. Epicurious (which sponsored the contest) has released The 2013 Healthy Lunchtime Challenge Cookbook. Kids have developed recipes that include bell peppers stuffed with quinoa, made salads with veggies and barley, hidden vegetables in lasagna and more. There isn’t a hot dog, chicken nugget, or traditional slice of pizza to be had.

Large, colorful photos accompany each recipe so kids can see exactly what the finished product will look like. This would be a great resource to download and let kids pick a dish or two that they’d like to make with you.
