Sweet, juicy blueberries are in season right now. With blueberry plants loaded with blueberries that are sun-kissed and plump, now is the time to be enjoying them in Oregon. Blueberries are incredibly rich in antioxidants that may help prevent cancer and other disease. But what I know for sure is that blueberries are delicious. Don't limit yourself, and use them throughout the day. Here are some healthy recipe ideas.
For the Morning:
Start the day with Lemon Blueberry Pancakes and sprinkle with lemon juice and powdered sugar.
Another special breakfast would be Healthy Banana Blueberry Bread.
However, my favorite way is to make a quick blueberry smoothie with blueberries, banana, coconut milk or yogurt, and ice cubes. I also love to make a simple fruit salad (with plenty of blueberries) and top with a lightly sweetened yogurt and homemade granola. Yum!

For the Afternoon:

A simple favorite is to enjoy frozen blueberries as a midday snack. Perfect on a hot day.
Or, for a special treat, how about a lemon blueberry muffin with a cup of coffee?
