Lately, sweet potatoes have had a much-deserved resurgence as an everyday ingredient. It’s common to see sweet potato fries or mashed sweet potatoes on restaurant menus, and you’ve probably added recipes for both those dishes to your own repertoire.


If you’d like to add more sweet potatoes to your diet, try one of these recipes that uses the root vegetable in a way you might not have considered.

  1. Sweet Potato Red Velvet Cupcakes – Yes, you read that right. This variation on the ultra-popular red velvet cake adds sweet potato to the cake and also includes sweet potato icing. The cupcake is topped off with a white chocolate, sweet potato and ginger truffle.
