Earlier this year, I told you about Jamie Oliver’s Food Tube on YouTube, his own Internet food channel. One of the features on Food Tube is “Jamie Presents” where he highlights cooks who already have established YouTube cooking channels and cooks who deserve to be discovered.

I was pleased when earlier this month, I saw Oliver tweet a welcome to Donal Skehan, who he added to his Food Tube channel. I’ve been following Skehan, an Irish cook, for several years now. I first came across his Good Mood Food Blog about four years ago when I was looking for Irish food blogs for St. Patrick’s Day. Since then he’s written four cookbooks, done quite a bit of food TV in Ireland, and taken the time to suggest a St. Patrick’s Day dinner menu for me.

Today, Oliver pointed out one of Skehan’s videos that shows how to make Smashed Tomato Pasta, or as Skehan calls it on his current blog, Homecooked, that has the detailed recipe for the dish, Mushy Roast Garlic with Cherry Tomato Pasta.

Doesn’t that look delicious? Cherry tomatoes, garlic, red onions and basil can all be found at the farmers market this time of year, making it a very summery pasta to me.
