Pear Frittata with Feta and Honey

Ground flaxseed is an excellent source of omega 3s and an even better substitute for eggs when three or more are required in recipes.

Pear Frittata with Feta and Honey

  • 1 tablespoon olive oil
  • 1 tablespoon ground flax seed
  • 3 tablespoons water
  • 4 eggs
  • 6 ounces Greek yogurt, divided
  • 2 ounces feta cheese, crumbled
  • 1 small Bosch pear, sliced thin
  • 2 tablespoons honey

Prep time: 10 minutes

Total time: 20 minutes

Cooking directions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Coat bottom and sides of large heavy-bottomed skillet with olive oil. Place skillet in heated oven.
  3. Combine flax seed and water in mixing bowl. Stir until flax coagulates, about 1 minute. Add eggs and half the yogurt. Stir until ingredients have an even consistency, about 2 minutes.
  4. Pour egg mixture into center of heated skillet. Add feta cheese. Layer sliced pear over egg batter. Place skillet on center rack of oven about 10 minutes or when eggs begin firm up.
  5. Remove skillet from oven and allow to cool, about two minutes. Carefully separate frittata from inner edge of skillet. Cut into 6 to 8 slices. Serve warm with remaining yogurt and drizzled honey.
