Popcorn and Kale

Win-win! Combine a super food with a super snack.

Total time: 10 minutes

Popcorn and Kale


  • 2oz. organic corn kernels
  • 2 tbs. canola or olive oil
  • 1/2 cup kale chips, crushed
  • Salt to taste
  1. Heat oil in a large heavy bottomed cook pot with lid over medium high heat, about 2 minutes. Place 3 kernels in pot and wait for them to pop. Remove and add remaining kernels to oil. Cover with lid leaving a small gap to allow moisture to escape. Keep one hand on the lid, while shaking pot from side to side until kernels pop, about 3 minutes. Remove from heat.
  2. Add popcorn to bowl. Toss with crushed kales chips and season with salt.
