Soyrizo Soft Tacos

Total time: 45 minutes, including marinating
Yield: Feeds 4 to 6
- 2 tbs. olive oil, divided
- 1/2 yellow onion, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 12 oz. Soyrizo
- 18 corn soft taco
- 2 small avocados, sliced
- 4 radishes, sliced
- 2 limes, halved and quartered
- 1/2 cup cilantro, stemmed and loosely chopped
- 1 cup green cabbage, chopped
- 1 cup Monterey, grated
- 1/2 cup reduced calorie sour cream
- 1/4 cup hot sauce
Heat 1 tbs. oil in a large skillet over medium-high heat for about 1 minute. Add onion and garlic, sauté until onions become translucent about 5 or 6 minutes. Add cumin and stir, until aromatic. Bank onions to the side of skillet then add Soyrizo with remaining olive oil. Cook for about 5 minutes, combine ingredients then cover on low heat.
In a second large skillet, evenly divide tacos into 3 stacks. Cover skillet leaving space to allow moisture to escape over low heat.
Meanwhile, prep your toppings. Slice avocados and radishes. Cut limes. Chop cilantro and cabbage. Grate cheese, about 25 minutes.
Plate food, top each soft taco with 1 tablespoon of Soyrizo and combine with condiments of your choice.
