Couscous with Asparagus Tips

Keep it simple with couscous, this one pot dish practically cooks itself within minutes.

Prep time: 5 minutes 

Total time: 10 minutes 

Yield: Feeds 2 to 4

Couscous with Asparagus Tips


  • 2 garlic cloves, minced
  • 2 tbs. olive oil
  • 10 oz. vegetable broth
  • 10 asparagus spears, trimmed and cut into 1/2 sections
  • 7.5 oz. Near East couscous with seasoning
  • 2 plum tomatoes, sliced
  1. In a 2 quart cooking pot, sauté garlic in olive oil over medium high heat.
  2. Add vegetable broth with couscous package seasoning. Stir and bring to a low boil, about 4 minutes.
  3. Add asparagus pieces, reduce heat and simmer, about 2 minutes.
  4. Stir in couscous, cover and remove from heat. Let stand for 5 minutes. Serve warm, garnished with plum tomatoes.
