Beer 'n' Brats

In the Upper Midwest, beer and brats are Sunday brunch. For the rest of us, it’s a quick dinner.

Prep time: 5 minutes

Total time: 30 minutes

Yield: Serves 3-6

Beer 'n' Brats


  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 1 large sweet or yellow onion, chopped thin
  • 1 tablespoon brown sugar
  • Pinch black pepper
  • Pinch kosher salt
  • Pinch paprika
  • 6 bratwurst
  • 24 ounces dark lager beer
  • 1 cup sauerkraut, drained (optional)
  • 6 sturdy buns
  • Dash spicy brown mustard (optional)
Cooking directions
  1. Melt butter and vegetable oil in a large heavy-bottomed skillet over medium heat until butter bubbles and foams. Add onions, sugar and seasoning and stir until contents begin to bubble. Add bratwurst and pour beer over ingredients until brats are covered. Bring to a boil and then cook over low heat 12 to 15 minutes. Remove brats and drain skillet of excess liquid.
  2. Grill brats in lightly oiled grill pan, cooking 3 to 4 minutes on each side, until light brown. Meanwhile add sauerkraut to browned onions and cook over low heat. Serve bratwurst on buns with condiments.
