Red Pepper Red Sauce

A savory vegetarian all-purpose red sauce goes well with sturdy cooked penne pasta.

Prep time: 20 minutes

Total time: 45 minutes

Yield: About 4 cups of sauce

Red Pepper Red Sauce


  • 2 tbs. olive oil
  • 1 yellow onion, diced
  • 2 large garlic cloves, minced
  • 1 tbs. Italian seasoning
  • 1 teaspoon red pepper flakes
  • 28-oz. can crushed tomatoes
  • 2 tbs. tomato paste
  • 2 tbs. parsley, chopped fine
  • 1/2 cup dry white wine
  • 1 tbs. white sugar
  • Handful basil leaves, torn
  • Salt and pepper to taste
  • 1/2 cup Parmesan cheese, grated
  1. Heat oil in saucepan over medium-high heat about 1 minute. Add onion and garlic, sauté until onions are translucent, about 5 to 6 minutes. Add Italian seasoning and red pepper flakes. Stir until fragrant.
  2. Stir in wine and sugar. Add tomatoes and tomato paste, bring to low boil. Reduce heat, cover and simmer for about 15 minutes. Stir in basil leaves, and remove sauce from heat when leaves turn bright green.
