Blackberry Clafoutis

A rustic dessert that's as simple to make as it is delicious to eat.

Prep time: 10 minutes 

Total time: 40 minutes 

Yield: Feeds 2 to 4

Blackberry Clafoitis


  • 2 tablespoons butter
  • 6 oz. black berries
  • 1/2 cup all purpose flour
  • 1/4 cup brown sugar, packed
  • 3 large eggs, beaten
  • 3/4 cups whole milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons brandy
  • 1/4 cup dark brown sugar, packed
  • Powdered sugar, as garnish (optional)
  1. Preheat oven to 425 degrees Fahrenheit.
  2. Melt butter in a 10-inch skillet. Scatter the berries on the bottom of the pan. Roll skillet from side to side to coat sides of skillet and berries with butter.
  3. In a large bowl, combine flour and sugar. Stir and indent. Add eggs, milk, vanilla extract, brandy, whisk until smooth. Let batter rest for about 10 minutes. Then, pour batter over the berries and bake for about 30 minutes, or until golden brown and toothpick inserted into the center comes out clean. Let cool to just above room temperature and top with powdered sugar. Serve with vanilla yogurt or ice cream with fresh fruit.
