Pineapple Tofu Kabobs

Sweet meets heat in the killer combo of grilled tofu and succulent pineapple.

Pineapple Tofu Kabobs


  • 2 12-ounce blocks baked tofu, cubed
  • 1 20-ounce can unsweetened pineapple chunks, drained
  • 3 tablespoons garlic chili sauce
  • 1 tablespoon lime juice
  • 3 limes, wedged
  • 1 1/2 tablespoons sesame oil, plus extra
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, chopped fine
  • Pinch salt and black pepper

Prep time: 30 minutes

Total time: 45 minutes

Cooking directions

  1. Prep grill. Soak bamboo skewers in water.
  2. To make the marinade, combine pineapple juice from can, garlic chili sauce, lime juice, sesame oil, minced garlic, jalapeno, salt and pepper in a mixing bowl. Stir and set aside, about 2 minutes.
  3. Cut baked tofu and pineapple chunks into even-sized 1 inch cubes. Thread skewers and add lime wedge to each. Brush each skewer with marinade.
  4. Lightly brush grill with oil. Place skewers on grill or grill pan over medium-high heat. Flip after 5 minutes. Remove when tofu browns and grill marks appear, about 5 more minutes. Remove from grill and serve with remaining marinade and lime.

Yield: Serves 4-6
