Roasted Pepper Rollups

A bit of manual dexterity with a sharp stick creates this delicious snack, which can also be served as a side dish.

Prep time: 15 minutes

Total time: 15 minutes

Yield: 8 rollups

Roasted Pepper Rollups


  • 1 12.5-oz. jar roasted peppers, drained
  • 4 to 6 oz. part-skim mozzarella cheese, sliced thin
  • 1 cup fresh basil leaves, rinsed and loosely packed
  • 1 teaspoon olive oil
  • 1 teaspoon balsamic vinegar
  • Salt and fresh ground pepper to taste
  • Bamboo skewers cut to size


  1. On a cutting board, cut roasted pepper into long strips. Cut mozzarella to size in thin slices, roughly 2/3 in relation to size of pepper.
  2. Center cheese on pepper, and add a few sprigs of basil to each portion. Roll peppers and skewer.
  3. Drizzle with olive oil and balsamic vinegar. A twist of salt and pepper completes the dish.
