Glazed Ginger Carrots

Yield: 4 to 6 servings
- 1 lb. organic carrots, rinsed and trimmed
- 1/3 cup fresh squeezed orange juice
- 1/4 teaspoon Kosher salt
- 1/4 teaspoon ground black pepper
- 1 tablespoon grated ginger
- 1/4 teaspoon cumin
- 2 tbs. parsley, chopped
- 1 lemon wedge
Cut carrots into even sized sections, spears or rounds. Place in saucepan with orange juice, salt, pepper, ginger and cumin. Bring to a boil. Cover and simmer for 10 minutes or until fork tender.
Transfer carrots to serving dish and toss with lemon juice and parsley. Serve hot.
