Blueberry Oatmeal Protein Smoothie

This vibrantly colored smoothie is sure to wake you up in a sweet way. All the wonderful nutritional benefits of a bowl of blueberry oatmeal can be found in this glass. The slow release of energy from the fiber-rich oatmeal will carry you through to lunch. Meanwhile, the sweetness of blueberries brightens this up both in color and taste, and also gives you the antioxidant boost that blueberries are so famous for. And the almond butter gives a comforting flavor that brings everything together, plus provides healthy fats that help you feel full and satisfied. In all, you'll get a whopping 40.5 grams of protein from this vegan smoothie.
Make sure that you don't skip the step for soaking the oats for a couple minutes before adding the rest of the ingredients to the blender. It helps to soften them so that your smoothie has a, well, smooth texture. It also helps the other flavors come forward a little bit more.

Blueberry Oatmeal Protein Smoothie


  • 1/2 cup oats soaked in 1/2 cup water
  • 1 cup blueberries
  • 1 cup unsweetened coconut milk
  • 5 ice cubes
  • 1 tablespoon almond butter
  • 2 tablespoons chia seeds, ground
  • 1 scoop (or packet) Vega vanilla protein powder
  1. Add the oats and water to your blender. Pulse a couple times and then allow the mixture to sit for at least 2-3 minutes so the oats can soften.
  2. Add blueberries and coconut milk. Pulse until combined.
  3. Add ice, and pulse until broken down.
  4. Add protein powder and chia seeds and whirl until thoroughly combined. Pour into a glass and enjoy!
