Red Kuri squash

This teardrop-shaped orange squash is from Japan, where it is known as a Kuri kabocha.

Because all squash is believed to originate in the Americas, this particular subspecies was likely cultivated independently after an ancestor was brought to eastern Asia several centuries ago.

The sweet yellow flesh of this cultivar is exceptionally smooth, making it excellent for purees, soups and stews.
